Barbecue, or Asado as it is locally known, is the national dish of Argentina, so they know a thing or two about grilling. Fancy up your summer BBQs by taking a cue from Ruca Malen‘s in-house chef, Lucas Bustos. Below is his fun recipe for Chimichurri, which involves imbibing in a bottle of wine before anything else! It can be used to liven up everything from chicken to steaks, even fish. Enjoy!

RUCA MALEN‘S CHIMICHURRI

Ingedients:
1 cup olive oil
1/2 tsp red wine vinegar
1/4 cup parsley, finely chopped
1 tsp dry chili flakes
2 tsp dry oregano
2 cloves of garlic
2 pinches of rock salt

“Drink a bottle of Ruca Malen Malbec Reserva and combine all the ingredients in the empty wine bottle. Let it macerate for a minimum of 24 hours. Serve atop grilled Argentinean beef.”
