Some spiced rums are merely colored, not aged; but this nut-brown spirit is made from a base of rum aged for four years in oak barrels. In that context, the substantial, oaky flavor makes perfect sense, rounded out by vanilla, dusty nutmeg and allspice. Mix with cola or ginger ale.
Caribbean Palmetto
2 oz Aged Spice Rum
1 oz Meletti Amaro
5 dashes orange bitters
Stir in a mixing glass with ice. Strain into a chilled cocktail glass. Garnish with orange twist.
